Story about my photoreport "Homemade grilled pork rind scratching in Phrae city"
Photo report on handcrafted grilled pork rind scratching in Phrae city located in the north of Thaïland. Asians are very greedy of fried pork skin, they willingly consume in accompaniment of all sorts of noodle soup or as simple snacking. Sold in plastic bag, you can buy them everywhere very easily. The preparation of the flesh of the pig is done in several meticulous steps : burning the animal's hair with a blowtorch, brushing and cleaning the skin, drying the skin a few hours under the sun, cutting the rind into small strips, frying the pieces of pork in the boiling oil, draining the fried rind. The final product is crisp, it has a strong burning smell and flavor which can disconcert the consumer the first time.
